The town of Elena is hosting the Feast of the Elena meat delicacy

The town of Elena, Veliko Tarnovo region, will welcome thousands of guests for the Feast of the Elena pork leg meat delicacy. Balkan masters will demonstrate their culinary art on Saturday and Sunday, BNR correspondent Zdravka Maslyankova reported. 

More than 1,500 Elena legs were prepared by the hosts for their guests. They point out that the intricacies of its preparation are a prerequisite for the unique taste of the pork delicacy. 

"The meat is from Bulgarian producers. The only preservative we use is salt. It ripens in a natural dryer, in a ventilated place. We are waiting for at least a year, a year and a half", reveals some of the secrets of the local meat delicacy master Pencho Truhchev. 

The holiday will be accompanied by a rich folklore program.
